The benefits of flying in a V pattern aren't very big unless you use them over a considerably distance. Generally, geese don't swim very far. They usually just wander and change direction very often making it unrealistic to always be in a V pattern.
bc/ they are2 different activities with 2 different functions.
flying in a V is for migration
swimming is short periods of time for finding food, usually, and therefore it's every goose for himself.
if they swam in a V then the front geese would be much fatter than the ones in the back b/c they'd get all the food first!
if you watch, though, they do stick together when they are swimming in a lake.
